Ingredients:
- 500 g Jerusalem artichokes
- 1 onion
- 2 garlic cloves
- 1 potato
- 1 l vegetable broth
- 200 ml cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Cold smoked salmon for garnish
- Fresh parsley
Instructions:
1. Peel the Jerusalem artichokes and potato, then cut them into small pieces.
2. Finely chop the onion and garlic.
3. Heat the olive oil in a pot and sauté the onion and garlic until soft.
4. Add the Jerusalem artichokes and potato, and sauté for a moment.
5. Pour in the vegetable broth and let the soup simmer for about 20 minutes, until the vegetables are tender.
6. Blend the soup with an immersion blender until smooth.
7. Stir in the cream and mix well. Season with salt and pepper.
8. Serve the soup in bowls and garnish with slices of cold smoked salmon and fresh parsley.
