This delicious sugar-free muffin recipe is a perfect option for a healthier treat. The muffins are packed with flavor, and you can add berries or fruits for a refreshing touch. Preparation Time: 30 minutes
Serving Size: 12 muffins
Ingredients:
- 3 dl all-purpose flour- 2 tsp baking powder
- 2 tbsp dark cocoa powder
- 3/4 dl poppy seeds or chopped nuts
- 2.5 dl melted butter
- 2 eggs
- 3/4 dl coffee or orange juice
- 3/4 dl boiling water
- (1 tsp vanilla sugar, optional)
- (1/2 dl 70% dark chocolate, chopped, optional)
Instructions:
1. Preheat the oven to 200°C (400°F).2. In a bowl, mix together the dry ingredients: flour, baking powder, cocoa powder, and poppy seeds or nuts.
3. In another bowl, crack the eggs and whisk them until frothy. Add the cooled melted butter and coffee or orange juice. Mix well.
4. Pour the egg mixture into the dry ingredients and stir until combined.
5. Finally, add the boiling water and mix again until smooth.
6. Divide the batter into muffin cups (using a muffin tray is recommended).
7. Bake in the middle of the oven for 13-15 minutes.
Allow the muffins to cool before serving. Enjoy!
