A light and fluffy Finnish sugar cake, perfect for any occasion. Preparation Time: 50 minutes
Serving Size: 8 servings
Ingredients:
- 4 large eggs
- 1½ dl sugar
- 2 dl all-purpose flour (or 1 dl all-purpose and 1 dl potato flour)
- 1 tsp baking powder
- Margarine for greasing the baking pan
Instructions:
1. Preheat the oven to 175°C (350°F).
2. Grease a cake pan with margarine.
3. In a bowl, whisk the eggs and sugar together until light and fluffy.
4. In a separate bowl, mix the flour and baking powder.
5. Gently fold the flour mixture into the egg and sugar mixture until smooth.
6. Pour the batter into the prepared cake pan.
7. Bake in the oven for about 30-40 minutes or until the cake is fully cooked.
8. Allow the cake to cool before serving.
