A savory quiche featuring cold-smoked salmon and tender leeks in a rich creamy filling.

Ingredients:
- 75 g butter
- 1 dl all-purpose flour
- 1 dl rye flour
- 0.5 dl water
- 200 g cold-smoked salmon
- 1 leek
- 2 dl heavy cream
- 3 eggs
- Salt and pepper to taste
- Fresh dill (optional)
Instructions:
1. Begin by making the crust. Melt the butter in a saucepan and mix in the all-purpose and rye flour until smooth.
2. Add the water to the dough and stir until it forms a uniform mixture.
3. Press the dough into a quiche dish and pre-bake at 180°C (350°F) for about 10 minutes.
4. Chop the leek and sauté it in a pan over low heat until softened.
5. Crumble the cold-smoked salmon over the pre-baked crust and add the sautéed leek on top.
6. In a bowl, whisk together the heavy cream, eggs, salt, and pepper. Pour the mixture over the salmon and leeks.
7. Bake the quiche in the oven at 180°C (350°F) for about 30-35 minutes, or until golden brown.
8. Allow the quiche to cool slightly before serving. Garnish with fresh dill if desired.
9. Serve the quiche with white wine and enjoy the autumn ambiance!
