Scallops with Leek Vinaigrette

A delightful seafood dish featuring tender scallops paired with a light, tangy leek vinaigrette. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 500 g fresh scallops
- 2 dl leeks (white part only)
- 1 dl olive oil
- 2 tbsp white wine vinegar
- 1 tbsp honey
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Rinse the scallops under cold water and pat them dry with paper towels.
2. Slice the leeks into thin rings and wash them thoroughly.
3. Heat the olive oil in a skillet over medium heat. Add the leeks and sauté for about 3-4 minutes until they are soft.
4. Stir in the white wine vinegar and honey to the leek mixture. Season with salt and black pepper. Let it simmer for another minute.
5. In a separate skillet, heat another tablespoon of oil over high heat. Sear the scallops for about 1-2 minutes on each side until they are beautifully golden brown.
6. Serve the scallops with the leek vinaigrette and garnish with fresh parsley.
