- 300 g pasta (e.g., spaghetti or fusilli)
- 200 g fresh spinach
- 200 ml cream
- 100 ml grated Parmesan cheese
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a bit of the cooking water.
2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until softened.
3. Add fresh spinach to the skillet and cook until wilted, about 3-4 minutes.
4. Pour in the cream and mix well. Let the sauce simmer on low heat for about 5 minutes.
5. Stir in the grated Parmesan cheese until melted. Season with salt and pepper.
6. Combine the cooked pasta with the sauce. Add reserved cooking water if the sauce is too thick.
7. Serve immediately, garnished with fresh basil if desired.
