This creamy vegetable pasta is a delicious and hearty dish packed with fresh vegetables and a rich sauce. Perfect for a quick dinner!
Ingredients:
- 250 g pasta (e.g., spaghetti or penne)
- 200 ml cream
- 100 ml vegetable broth
- 1 small onion
- 2 garlic cloves
- 1 bell pepper
- 1 zucchini
- 100 g peas (fresh or frozen)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (basil or parsley) for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the pasta water.
2. Peel and chop the onion and garlic. Dice the bell pepper and zucchini.
3. Heat olive oil in a large skillet. Add the onion and garlic, sautéing until soft.
4. Add the bell pepper and zucchini to the skillet, cooking for a few minutes until the vegetables are slightly tender.
5. Pour in the cream and vegetable broth, mixing well. Let it simmer on low heat for a few minutes.
6. Stir in the peas and cooked pasta. Mix thoroughly and add a bit of reserved pasta water if needed to keep it moist.
7. Season with salt and pepper to taste.
8. Serve warm, garnished with fresh herbs.
