This dish, inspired by Smör's Ville Lemisen, elevates your taste experience with fresh ingredients and vibrant flavors.
Ingredients:
- 400 g fresh salmon
- 200 g quinoa
- 1 lemon
- 1 avocado
- 100 g cherry tomatoes
- 1 red onion
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., basil or parsley)
Instructions:
1. Cook quinoa according to package instructions. Drain and set aside.
2. Cut the salmon into portion sizes and season with salt and pepper.
3. Heat olive oil in a pan and cook the salmon pieces for about 3-4 minutes on each side until cooked through.
4. Slice the avocado and cherry tomatoes. Chop the red onion.
5. Squeeze the lemon juice into a bowl and mix in the quinoa, avocado, cherry tomatoes, red onion, and fresh herbs.
