Ingredients:
- 4 cups all-purpose flour
- 1.5 cups sugar
- 2 tsp baking powder
- 2 tsp baking soda
- 2 tbsp vanilla sugar
- 250 g melted margarine
- 500 g cottage cheese
- Juice and zest of 2 lemons
- 3 eggs
Instructions:
1. Preheat the oven to 175°C (350°F).
2. In a bowl, mix together the flour, sugar, baking powder, baking soda, and vanilla sugar.
3. Add the melted margarine and mix until a smooth dough forms.
4. Set aside about one-third of the dough and press the remaining dough into a pie dish.
5. In a separate bowl, prepare the filling by mixing the cottage cheese, lemon juice, lemon zest, and eggs.
6. Pour the filling over the crust in the pie dish.
7. Crumble the reserved dough over the filling.
8. Bake in the oven for about 40-45 minutes or until the top is golden brown.
9. Allow to cool before serving.
