A delicious salad that came together by mixing what was in my fridge. A perfect way to utilize leftover ingredients! Preparation Time: 15 minutes
Serving Size: 2-3
Ingredients:
- 2 handfuls of fresh salad greens (e.g., iceberg lettuce, arugula)
- 1 tomato, diced
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 100 g feta cheese, crumbled
- 1/2 cup cooked beans (e.g., chickpeas or black beans)
- 1/4 cup olives, sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse and prepare the salad ingredients.
2. In a bowl, combine the salad greens, tomato, cucumber, red onion, feta cheese, beans, and olives.
3. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper in a separate bowl.
4. Pour the dressing over the salad and toss gently.
5. Serve immediately and enjoy!
