Lemon Mousse

A refreshing and delicious lemon mousse, perfect for dessert at parties or any day. Preparation Time: 30 minutes + 2 hours in the fridge
Serving Size: 4-6 servings
Ingredients:
- 1 lemon - 100 g sugar
- 3 egg yolks
- 200 ml heavy cream
- 2 gelatin sheets
- 2 tablespoons water
Instructions:
1. Zest the yellow outer part of the lemon using a fine grater. Squeeze and reserve the lemon juice. 2. Whisk the sugar and egg yolks together until fluffy. In a separate bowl, whip the cream.
3. Soak the gelatin sheets in cold water for a few minutes, then dissolve them in a small amount of warm lemon juice.
4. Combine the lemon juice and zest with the egg yolk mixture. Gently fold in the whipped cream, followed by the cooled gelatin mixture.
5. Spoon the lemon mousse into dessert cups and refrigerate for at least two hours to set.
