Ingredients:
- 200 g dark chocolate
- 3 eggs
- 3 tablespoons sugar
- 2 dl heavy cream
- 1 teaspoon vanilla sugar
- A pinch of salt
Instructions:
1. Melt the dark chocolate in a water bath or microwave. Allow it to cool slightly.
2. Separate the egg yolks from the whites. Whisk the yolks with the sugar until light and fluffy.
3. Add the melted chocolate to the egg yolk mixture and mix well.
4. Whisk the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture to keep it airy.
5. In a separate bowl, whip the heavy cream with vanilla sugar, then fold it into the chocolate mixture carefully.
6. Pour the mousse into serving bowls and refrigerate for at least 2 hours before serving.
7. Optionally, garnish with berries or chocolate shavings before serving.
