Ingredients:
- 300 g grated carrots - 200 g sugar
- 150 ml canola oil
- 3 eggs
- 200 g all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 100 g nuts (e.g., walnuts)
- 100 g raisins (optional)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan. 2. In a large bowl, mix sugar, oil, and eggs. Whisk well.
3. Add the grated carrots and mix until smooth.
4. In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Mix the dry ingredients together.
5. Gradually add the dry mixture to the carrot mixture and gently stir until well combined.
6. Fold in the nuts and raisins, if using, and mix once more.
