A fresh and lightly seasoned salad that brings out the flavors of spring. Perfect as a side dish for a road trip or picnic. Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 150 g mixed greens (e.g., iceberg lettuce, arugula)
- 200 g cherry tomatoes
- 1 cucumber
- 1 avocado
- 100 g feta cheese
- 50 g roasted nuts (e.g., walnuts)
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse and dry the mixed greens. Place them in a large salad bowl.
2. Halve the cherry tomatoes and add them to the bowl.
3. Peel and slice the cucumber and avocado. Add them to the salad.
4. Crumble the feta cheese over the salad.
5. Sprinkle the roasted nuts into the salad.
6. Prepare the dressing by mixing the olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the salad and toss gently.
7. Serve immediately!
