Ingredients:

- 2 garlic cloves, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 liter vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions:
1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until soft.
