Lemon Meringue Pie

A delightful dessert featuring a tangy lemon filling topped with a fluffy meringue. Perfect for any occasion! Preparation Time: 45 minutes
Serving Size: 8 servings
Ingredients:
- 10 Digestive biscuits
- 25 g margarine
- Zest and juice of 2 lemons
- 2 dl water
- ½ dl sugar
- 2 tablespoons cornstarch
- 3 eggs
- 1 dl sugar (for meringue)
- 1 teaspoon vanilla sugar
Instructions:
1. Crumble the Digestive biscuits and mix them with the melted margarine. Press the mixture into a pie dish to form the crust.
2. In a saucepan, heat the water, lemon juice, and lemon zest. Add the sugar and cornstarch, stirring well, and cook until the mixture thickens.
3. Remove the saucepan from heat and let it cool slightly.
4. Separate the egg yolks from the whites. Add the yolks to the lemon mixture and mix well.
5. Pour the lemon filling over the biscuit crust and bake at 175°C (347°F) for about 20 minutes.
6. Prepare the meringue: whip the egg whites and sugar until stiff peaks form. Add the vanilla sugar.
7. Spread the meringue over the lemon filling and bake for an additional 10-15 minutes, until the meringue is beautifully golden brown.
8. Allow to cool before serving. Enjoy this delicious treat!
