A delicious and hearty Finnish sausage soup, perfect for cold days. Easy and quick to prepare. Preparation time: 40 minutes
Serving size: 4-6 servings
Ingredients:
- 1 tsp salt - 200 g rutabaga
- 1 tbsp chopped parsley
- 3 carrots
- Celery
- 1 rye bread
- 1 onion
- 1 tsp allspice
- 6 potatoes
- 500 g siskonmakkara (Finnish sausage)
- 4 tsp margarine (60% fat)
- Water
Instructions:
1. Wash, peel, and chop the carrots, rutabaga, and celery.2. Sauté the onion in margarine in a pot.
3. Add the chopped vegetables and allspice to the onion.
4. Pour in enough water to cover the ingredients and add salt.
5. Bring the mixture to a boil and let it simmer on low heat for about 20 minutes.
6. Peel and chop the potatoes, then add them to the soup.
7. Add the siskonmakkara and continue cooking for another 10-15 minutes until the potatoes are tender.
8. Serve the soup with fresh rye bread and sprinkle with chopped parsley.
