Serving Size: 4 servings
Ingredients:
- 300 g sausage meat - 1 large onion
- 2 potatoes
- 2 carrots
- 1 liter chicken broth
- 200 g corn (frozen or canned)
- 100 ml cream
- 1 tsp curry powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion, potatoes, and carrots. 2. Heat a bit of oil in a pot and sauté the onion until soft.
3. Add the potatoes and carrots to the pot, and cook for a few minutes.
4. Pour in the chicken broth and simmer until the vegetables are nearly tender.
5. Squeeze the sausage meat out of its casing and form small balls. Add them to the soup.
6. Stir in the corn, cream, and curry powder. Cook for an additional 5-10 minutes until the sausage balls are cooked through.
7. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh parsley.
