Creamy Curry Mussels

A delicious dish of blue mussels cooked in a creamy curry sauce, perfect for a seafood feast.
Ingredients:
- 2 tbsp butter
- 3 shallots, chopped
- 1/4 tsp cayenne pepper
- 1/2 tbsp mild curry paste
- 2 crusty baguettes, sliced
- 100 ml white wine
- 1 tbsp chopped thyme
- 50 ml chopped parsley
- 2 egg yolks
- 2 kg blue mussels, cleaned
- 200 ml heavy cream
- 1 bay leaf
Instructions:
1. Pour the white wine into a large pot and heat it over medium heat.
2. Add the butter and chopped shallots to the pot. Sauté the shallots until they are soft.
3. Stir in the cayenne pepper and curry paste, mixing well.
4. Add the chopped thyme, bay leaf, and parsley, stirring to combine.
5. Add the mussels to the pot, cover with a lid, and cook until the mussels open up.
6. Pour the heavy cream into the pot and mix well. Allow it to simmer gently.
7. In a bowl, whisk the egg yolks and gradually add a bit of the hot sauce to temper them, mixing until smooth.
8. Pour the egg yolk mixture back into the pot and stir well. Do not let it boil again.
9. Serve the mussels warm with slices of baguette on the side.
