A delicious and easy shellfish pasta that comes together quickly. Perfect for busy weeknight dinners. Preparation time: 30 minutes
Serving size: 4
Ingredients:
- 500 g fresh pasta
- 50 g grated Parmesan cheese
- 1 can of shellfish
- 3 tbsp red pesto
- 1 can of tomato pasta sauce
- Pitted olives
- Salt (for pasta water)
- Water (for boiling pasta)
Instructions:
1. Boil a large pot of water and add salt.
2. Cook the fresh pasta according to the package instructions.
3. Meanwhile, prepare the pasta sauce by mixing the tomato sauce and red pesto in a pot. Heat the mixture over low heat.
4. Add the olives to the sauce and let it simmer for a few minutes. Then reduce the heat to low.
5. When the pasta is cooked, drain it and then mix it into the sauce.
6. Add the drained shellfish and stir well.
7. Serve the pasta topped with grated Parmesan cheese.
