Ingredients:
- 300 g whole grain pasta - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 200 g cherry tomatoes, halved
- 100 g fresh spinach
- Salt and pepper to taste
- 50 g grated Parmesan cheese (optional)
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some of the cooking water. 2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sauté for about 2-3 minutes.
3. Add the bell pepper and zucchini to the skillet, cooking for another 5-7 minutes until the vegetables soften.
4. Stir in the cherry tomatoes and spinach, mixing well. Cook for a few more minutes until the spinach wilts.
5. Combine the cooked pasta with the vegetable mixture. Add a little reserved cooking water if needed to create a more saucy consistency. Season with salt and pepper.
6. Serve the pasta in bowls and sprinkle with grated Parmesan cheese and fresh basil.
