Ingredients:
- 2 tsp sugar - 1 hard-boiled egg
- 200 g lightly salted herring fillets
- 2 dl heavy cream
- 1 tbsp vinegar
- 1 onion (or leek)
- 12 new potatoes
Instructions:
1. Cut the herring fillets into small cubes. 2. Whip the heavy cream until it forms soft peaks.
3. Add sugar and vinegar to the whipped cream and mix well.
4. Finely chop the onion or leek.
5. Crumble the hard-boiled egg.
6. In a bowl, combine the herring cubes, chopped onion or leek, crumbled egg, and the cream mixture.
7. Serve the herring caviar alongside the new potatoes.
