A delicious and colorful vegetable dish perfect as a dip with tortilla chips or as a side for meat dishes.

Ingredients

- 1 can black beans (15 oz)
- 1 can pinto beans (15 oz)
- 1 can corn (15 oz)
- 4-5 large tomatoes
- 1-3 bell peppers (preferably different colors)
- 1 bunch fresh cilantro (leaves only)
- 4-5 green onions
- ½ red onion
- 1 avocado
- ½ cup olive oil
- 1 tablespoon red wine vinegar
- 1 lime (cut in half)
- 1 teaspoon maple syrup (or honey)
- 2½ tablespoons homemade taco seasoning
Homemade Taco Seasoning:
- 1 tablespoon salt
- 1 tablespoon ground black pepper
- 1 tablespoon dried oregano
- 2 teaspoons dried basil
- 2 teaspoons cumin
- 2 teaspoons garlic powder
- 1½ teaspoons ground coriander
- 1 teaspoon smoked paprika
- 1 teaspoon red pepper flakes
- 1-2 bags tortilla chips

Instructions

1. Rinse and drain the black beans, pinto beans, and corn. Dice the tomatoes, removing the seeds. Chop the bell peppers into small pieces. Mince the cilantro leaves and slice the green onions thinly. Dice the red onion.
2. In a small bowl, mix together the olive oil, red wine vinegar, lime juice, maple syrup, and homemade taco seasoning.
3. In a large bowl, combine all the vegetables and the dressing. Halve the avocado, remove the pit, and dice the flesh. Squeeze lime juice over the avocado and gently fold it into the salsa.
4. Serve with tortilla chips.
