Ingredients:
- 4 whole grain wraps
- 1 avocado
- 1 cucumber
- 1 bell pepper (e.g., red or yellow)
- 1 cup grated carrot
- 1 cup fresh spinach
- 100 g hummus
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse and slice the cucumber and bell pepper.
2. Halve the avocado, remove the pit, and mash the flesh in a bowl with lemon juice. Season with salt and pepper.
3. Spread hummus evenly over each wrap.
4. Layer the mashed avocado, sliced cucumbers, bell peppers, grated carrot, and spinach on top.
5. Roll the wraps tightly and cut in half if desired.
6. Serve immediately or wrap in foil to take on the go!
