A delicious Finnish dish featuring layers of herring, potatoes, and crispy bacon.

Ingredients:
- Herring fillets
- Potatoes
- Onion
- Bacon
- Salt
- Black pepper
- Eggs
- Milk
Instructions:
1. Peel and slice the potatoes and onion.
2. Fry the bacon in a pan until crispy. Remove the bacon and leave the fat in the pan.
3. Add the onions to the pan and sauté until soft.
4. Grease a baking dish with the reserved bacon fat and layer the potatoes, herring fillets, sautéed onions, and bacon. Season with salt and black pepper between the layers.
5. In a bowl, crack the eggs and add the milk. Whisk well.
6. Pour the egg and milk mixture over the layered ingredients in the baking dish.
7. Bake in the oven at 180°C (350°F) for about 45-60 minutes, or until the potatoes are cooked through and the top is golden brown.
8. Allow the dish to rest for a few minutes before serving. Enjoy warm.
