A delicious tomato sausage skillet that combines sausage, tomatoes, and spices, creating a flavorful and filling meal. You can also substitute the sausage for chickpeas for a vegetarian version.

Ingredients:
- ½ large bell pepper, sliced
- 5 large brown mushrooms, sliced
- ½ onion, chopped
- 2 garlic cloves, minced
- 100 g sausage (e.g., Krakow sausage) or substitute with chickpeas
- A handful of fresh spinach leaves, chopped
- 1 can crushed tomatoes
- ½ - 1 tsp chili flakes (to taste)
- 1-2 tsp honey
- 1 tsp balsamic vinegar
- 1 tsp dried oregano
- Salt and black pepper to taste
- A few basil leaves, chopped
- 2 eggs
Instructions:
1. Slice the mushrooms and bell pepper.
2. Heat oil in a skillet and add the mushrooms and bell pepper. Sauté for about 3-4 minutes.
3. Chop the onion and garlic, then slice the sausage. Add them to the skillet and cook until the sausage is browned.
4. Chop the spinach leaves and add them to the skillet. Stir to combine.
5. Pour in the crushed tomatoes and season with chili flakes, honey, balsamic vinegar, oregano, salt, and black pepper. Mix well.
6. Add the chopped basil and stir. Increase the heat and bring the mixture to a boil.
7. Make two wells in the sauce and crack the eggs into the wells. Cover with a lid and cook to your desired doneness (4-5 minutes for soft yolks).
8. Serve immediately.
