A warming and nourishing salmon soup that helps you recover from colds and soothes a sore throat. Preparation time is only 30 minutes, and it serves one or two people.
Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, diced
- 2 celery stalks, sliced
- 4 cups vegetable broth
- 1/2 cup rice (e.g., jasmine rice)
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- 200g salmon, cubed
Instructions:
1. Heat olive oil in a pot over medium heat.
2. Add chopped onion and crushed garlic, sautéing until soft.
3. Add diced carrots and sliced celery, cooking for a few more minutes.
4. Pour in the vegetable broth and add rice and thyme.
5. Bring to a boil, then reduce the heat. Let it simmer for about 15-20 minutes until the rice is cooked.
6. Add the cubed salmon and cook for an additional 5 minutes, until the salmon is cooked through.
7. Season with salt and pepper. Serve hot, garnished with fresh parsley.
