A delicious swede and chickpea curry that’s perfect for warming up during the winter months. It's vegan and easily customizable to suit your taste preferences. Preparation Time: 30 minutes

Ingredients:
- 1 medium swede, diced
- 1 can (400 g) chickpeas, rinsed and drained
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 1 can (400 ml) coconut milk
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh coriander for garnish (optional)
Instructions:
1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent.
2. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
3. Add the diced swede and sauté for a few minutes until it starts to soften.
4. Sprinkle in the curry powder and turmeric, mixing well and cooking for another minute.
5. Pour in the coconut milk and add the rinsed chickpeas. Stir to combine.
6. Allow the curry to simmer on low heat for about 15-20 minutes until the swede is tender.
7. Season with salt and pepper to taste. Serve warm, garnished with fresh coriander if desired.
