Serving Size: 4 servings
Ingredients:
- 1 whole chicken (about 4-5 pounds)
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 2 lemons (one for juice, one sliced)
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 425°F (220°C).
2. In a small bowl, mix the olive oil, minced garlic, lemon juice, chopped rosemary, and thyme.
3. Pat the chicken dry with paper towels and place it in a roasting pan.
4. Rub the garlic and herb mixture all over the chicken, including under the skin.
5. Season generously with salt and pepper and place the lemon slices inside the cavity of the chicken.
6. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).
7. Let the chicken rest for 10 minutes before carving. Serve warm.
