A delicious smoked scallops dish served on a bed of matcha-infused rice.

Ingredients:
- 1 tablespoon authentic wasabi
- 2 tablespoons matcha tea powder
- 150 grams rice
- 4 wooden skewers
- 0.5 dl homemade mayonnaise
- 2 tablespoons butter
- 8 large scallops
Instructions:
1. Mix the matcha tea powder into the rice until evenly combined.
2. Spread the rice mixture onto a smoking tray lined with foil.
3. Clean and pat dry the scallops.
4. Skewer two scallops onto each wooden skewer.
5. Ignite the smoker and smoke the scallops in strong smoke until cooked through.
6. Serve the smoked scallops with homemade mayonnaise and wasabi on the side.
