Ingredients:
- 1 cup (240 ml) oat flour - 1/2 cup (120 ml) sugar
- 2 tbsp matcha powder
- 1/2 tsp (2 g) baking powder
- 1/4 tsp (1 g) salt
- 1/2 cup (120 ml) vegan white chocolate, chopped
- 1/4 cup (60 ml) vegetable oil
- 1/4 cup (60 ml) almond milk or other plant milk
- 1 tsp (5 ml) vanilla extract
Instructions:
1. Preheat the oven to 180°C (350°F).2. In a large bowl, mix together the oat flour, sugar, matcha powder, baking powder, and salt.
3. Add the oil, plant milk, and vanilla extract. Stir until a smooth dough forms.
4. Fold in the vegan white chocolate pieces and mix well.
5. Shape the dough into about 12 balls and place them on a baking sheet lined with parchment paper.
6. Bake the cookies in the oven for about 10-12 minutes, or until the edges are slightly golden brown.
7. Allow to cool before serving.
