A classic Italian dish that's quick to prepare for a weeknight dinner, combining pasta, bacon, and cream for a delicious and hearty meal.
Preparation Time: 20 minutes
Serving Size: 4
Ingredients:
- 400 g pasta (e.g., spaghetti or penne)
- 150 g bacon or pancetta
- 3 eggs
- 100 ml cream
- 50 g Parmesan cheese (grated)
- Salt
- Black pepper
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain the pasta, reserving a little cooking water.
2. Heat a frying pan over medium heat and add the bacon or pancetta. Cook until crispy.
3. In the meantime, in a bowl, mix the eggs, cream, Parmesan cheese, salt, and black pepper.
4. Once the pasta is cooked, add it to the pan with the bacon and mix well.
5. Remove the pan from the heat and add the egg mixture to the pasta. Stir quickly to ensure the eggs don’t scramble.
6. If the pasta seems too dry, add a bit of the reserved cooking water.
7. Serve immediately, garnished with fresh parsley if desired.
