A delicious Finnish soup made with smoked herring, fresh vegetables, and creamy cheese. Perfect for warming up on a chilly day. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250-300 g boneless and skinless smoked herring
- 5-6 new potatoes
- 1 large or 2 small fennels
- 1 onion
- A knob of butter
- 10 dl fish stock
- 1 tbsp Thai fish sauce
- 1 tsp whole fennel seeds
- 50 g strong Koskenlaskija cream cheese
- 2-3 tbsp finely chopped fresh chives
- 2-3 tbsp finely chopped fresh dill
Instructions:
1. Wash the new potatoes thoroughly, no need to peel them.
2. Cut the potatoes into bite-sized pieces.
3. Chop the fennel similarly and dice the onion.
4. Heat the butter in a pot and sauté the onion, fennel seeds, and potatoes for a few minutes.
5. Add the fish stock and fish sauce, and simmer for about 5-8 minutes.
6. Add the chopped fennel to the soup and cook until the potatoes are tender.
7. Stir in the Koskenlaskija cheese and remove the pot from the heat.
8. Gently add the smoked herring and its roe to the soup, stirring lightly.
9. Mix in the dill and chives, stirring once more.
10. Serve hot with toasted Rye bread.
