A delicious cheesy baked potato that makes a perfect side dish or main course. You can use camembert or brie cheese, which melts beautifully over the potato.

Ingredients:
- 2 large potatoes
- 100 g camembert or brie cheese
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh rosemary or thyme (optional)
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Wash the potatoes thoroughly and dry them. Poke a few holes in the potatoes with a fork.
3. Rub the olive oil over the surface of the potatoes and season with salt and black pepper.
4. Place the potatoes on a baking sheet and bake in the oven for about 30-35 minutes, until they are tender.
5. Remove the potatoes from the oven and let them cool slightly. Cut them open lengthwise and gently squeeze the sides to create space for the cheese.
6. Slice the cheese and place it on top of the potatoes.
7. Return the potatoes to the oven for about 5-10 minutes, until the cheese is melted and bubbly.
8. Garnish with fresh rosemary or thyme before serving.
