Serving Size: 4-6 servings
Ingredients:
- 1 kg lamb shoulder or shank - 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 potatoes, diced
- 3 carrots, sliced
- 200 g green beans
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 100 ml red wine
- 500 ml beef broth
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot or Dutch oven over medium heat. Brown the lamb on all sides. 2. Add the chopped onion and crushed garlic, and sauté until the onions are soft.
3. Add the diced potatoes, sliced carrots, and green beans, and stir well.
4. Season with thyme, rosemary, salt, and pepper.
5. Pour the red wine and beef broth over the mixture. Bring to a boil, then reduce the heat and let simmer on low for about 1.5 hours.
6. Check the liquid level and add water if needed. Continue simmering until the meat is tender.
7. Serve hot, preferably with fresh bread.
