Ingredients:
- 1 cup red lentils - 1 large onion, chopped
- 2 tomatoes, diced
- 1 potato, diced
- 1 carrot, diced
- 1 large tablespoon tamarind juice
- 1-2 green chilies, sliced
- 1 teaspoon turmeric
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons oil
- 1 teaspoon black pepper
- 1 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- Fresh coriander for garnish
Instructions:
1. Rinse the lentils in cold water and cook them in a pot until soft (about 20-25 minutes). 2. Heat oil in a large pot over medium heat. Add black pepper and mustard seeds, and fry until they start to pop.
3. Add the chopped onion and sauté until golden brown.
4. Stir in the green chilies, tomatoes, potato, and carrot. Cook for a few minutes.
5. Add the cooked lentils, turmeric, sugar, salt, and tamarind juice. Mix well and let it simmer on low heat for about 15-20 minutes.
6. Garnish with fresh coriander before serving.
