A staple Indian curry, Sambar offers a tangy flavor and a delightful warmth. This lentil stew is a perfect addition to any meal and tastes even better when stored in the refrigerator. Preparation Time: 1 hour
Serving Size: 4-6
Ingredients:
- 1 cup red lentils - 1 medium onion, chopped
- 1 tomato, diced
- 1 potato, cubed
- 1 moringa leaf (or green beans)
- 2-3 tablespoons sambar powder
- 1 teaspoon turmeric
- 1 tablespoon oil
- 1-2 green chilies, slit
- 1 teaspoon mustard seeds
- Salt to taste
- Fresh coriander for garnish
- 4-5 cups water
Instructions:
1. Rinse the lentils in cold water and boil them in a pot with four cups of water until soft. 2. Heat oil in a large pot and add mustard seeds. Wait until they start popping.
3. Add chopped onion and green chilies, sautéing until the onions turn golden brown.
4. Stir in the tomato, potato, and turmeric. Cook for about 5 minutes.
5. Add the cooked lentils, sambar powder, and moringa leaves (or green beans). Mix well.
6. Pour in the remaining water and add salt. Let it simmer on low heat for about 15-20 minutes.
7. Garnish with fresh coriander before serving.
