Ingredients

- 2 Atrian Red Sausages
- 100 g Edam cheese
- 100 g grape leaves
- 100 g arugula
- 50 g lamb's lettuce
- 2 spring onions
- 200 g cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and sugar to taste
- Black pepper
- Thyme
- 1-2 garlic cloves

Instructions

1. Peel the sausages and make slits on their surface. Fill the slits with Edam cheese.
2. Place the sausages in the oven at 200°C (392°F) for about 15-20 minutes, until heated through and the cheese has melted.
3. Prepare the salad: combine grape leaves, arugula, and lamb's lettuce on a serving plate.
4. Chop the spring onions and add them to the salad.
5. In a pan, heat 1 tbsp of olive oil. Add halved cherry tomatoes, a pinch of thyme, black pepper, grated garlic, and sugar. Cook for about 10 minutes until the tomatoes soften.
6. Drizzle olive oil and balsamic vinegar over the salad. Season with salt and sugar.
7. Serve the baked sausage on top of the salad and add the cooked cherry tomatoes on top.
