This delicious salad combines tender roasted eggplant with pulled turkey, fresh vegetables, and a zesty dressing for a refreshing meal.
Ingredients:
- Kivikylän pulled turkey
- 1 eggplant
- 1 lemon
- 2 garlic cloves
- 2 tablespoons olive oil
- Salt to taste
- 1 cucumber
- 2 tomatoes
- Lettuce
- 2 green onion stalks
Instructions:
1. Slice the eggplant into rounds and place them on a baking sheet.
2. Mince the garlic and mix it with olive oil, lemon juice, and salt.
3. Brush the eggplant slices with the mixture and roast in a preheated oven at 200°C (392°F) for about 20-25 minutes, until soft and golden brown.
4. Chop the cucumber, tomatoes, and green onion stalks.
5. In a bowl, combine the lettuce, cucumber, tomatoes, and green onion.
6. Once the eggplant is cooled, add it along with the pulled turkey on top of the salad.
7. Serve immediately and enjoy!
