Ingredients:
- 4 large bell peppers (red, yellow, or green)
- 400 g pulled meat (e.g., turkey or pork)
- 200 g sauerkraut
- 1 onion, chopped
- 2 garlic cloves, crushed
- 100 ml rice (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika powder
- 2 tbsp olive oil
- Fresh parsley or basil for garnish
Instructions:
1. Heat olive oil in a skillet over medium heat. Add chopped onion and crushed garlic, and sauté until soft.
2. Add pulled meat to the skillet and cook until heated through and slightly browned. Season with salt, black pepper, and paprika powder.
3. If using rice, add it now and mix well. Stir in sauerkraut and combine all ingredients. Allow to cook for a few minutes.
4. Cut the tops off the bell peppers and remove the seeds. Fill the peppers with the pulled meat mixture.
5. Place the stuffed peppers in a baking dish and cover with foil. Bake at 180°C (350°F) for about 25-30 minutes.
6. Remove the foil and bake for an additional 10 minutes, until the peppers are soft and slightly browned on top.
7. Garnish with fresh parsley or basil before serving.
