Ingredients:

- 1 onion
- 2 garlic cloves
- 3 potatoes
- 4 dl vegetable broth
- 2 dl cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Peel and chop the onion, garlic, and potatoes.
2. In a pot, heat the butter and add the onion and garlic. Sauté on low heat for about 5 minutes.
3. Add the chopped potatoes and vegetable broth. Cook until the potatoes are tender, about 15-20 minutes.
4. Blend the soup with an immersion blender until smooth.
5. Stir in the cream and season with salt and pepper. Heat the soup again, but do not boil.
6. Ladle the soup into bowls and garnish with fresh parsley.
