Ingredients
- 0.5 tsp saffron - 3 dl dry white wine
- 1 pike fillet, boneless
- 1 parsnip
- 4 dl fish stock or water
- Fresh dill
- 2 tbsp oil
- 0.5 tsp sugar
- Pinch of salt
- 0.2 tsp freshly ground white pepper
- 1 fennel bulb
- 0.5 tsp fine sea salt
- 1 onion
Instructions
1. Julienne the onion, fennel, parsnip, and pike fillet. 2. Chop the fresh dill.
3. Heat the oil in a large pot over medium heat.
4. Add the onion, fennel, and parsnip, and sauté for about 5 minutes.
5. Pour in the fish stock or water, dry white wine, and saffron. Bring to a boil.
6. Add the pike fillet, sugar, salt, and white pepper. Let the soup simmer on low heat for about 10 minutes.
7. Remove the pot from the heat and stir in the chopped dill.
8. Serve hot.
