Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried basil
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
3. Add the crushed garlic and sauté for another minute.
4. Add the diced bell pepper and zucchini, cooking for about 5 minutes until the vegetables are tender.
5. Stir in the cherry tomatoes, dried basil, salt, and pepper. Cook for another 3-4 minutes until the tomatoes begin to soften.
6. Add the cooked pasta to the skillet with the vegetables. Mix well, adding a bit of the reserved cooking water if needed to keep the mixture moist.
7. Serve topped with grated Parmesan cheese and fresh basil for garnish, if desired. Enjoy!
