Ingredients:
- 500 g potatoes - 300 g zucchini
- 200 g bell peppers
- 1 red onion
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh thyme
- 100 g feta cheese
Instructions:
1. Peel and dice the potatoes into cubes. Boil them in salted water for about 10 minutes until they are partially cooked. 2. Cut the zucchini, bell peppers, and red onion into strips.
3. Preheat the oven to 200°C (392°F).
4. Drain the potatoes and mix all the vegetables in a bowl. Add the olive oil, salt, black pepper, and thyme. Mix well.
5. Pour the vegetable mixture onto a baking tray and roast in the oven for about 20 minutes, until the vegetables are tender and golden brown.
6. Crumble the feta cheese over the bake and return to the oven for an additional 5 minutes, until the cheese is slightly melted.
7. Serve immediately and enjoy the summer flavors!
