A quick and easy vegetable pasta that's perfect for anyone who loves flavorful and nutritious meals. Preparation time is just 30 minutes and serves 4.Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little cooking water.
2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for about 3-4 minutes.
3. Add the bell pepper and cherry tomatoes, and cook for another 5 minutes until the tomatoes soften.
4. Stir in the spinach and mix until it wilts.
5. Add the cooked pasta to the skillet and toss. If needed, add a bit of reserved cooking water to prevent the pasta from being too dry.
6. Season with salt and pepper. Serve with fresh basil and grated Parmesan cheese, if desired.
