Ingredients:

- 500 g potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 100 ml mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- Fresh herbs (e.g., parsley or chives)

Instructions:

1. Peel and cut the potatoes into fries.
2. Boil the potatoes in salted water for about 5-7 minutes, until slightly softened.
3. Drain the potatoes and let them cool.
4. Preheat the oven to 200°C (392°F).
5. Toss the potatoes with olive oil, salt, black pepper, and paprika powder.
6. Spread the potatoes on a baking sheet and bake for about 20-25 minutes, until golden brown and crispy.
7. In a bowl, mix together mayonnaise, Dijon mustard, and lemon juice.
8. Serve the fries with the dipping sauce and garnish with fresh herbs.
