Deliciously crispy Irish boxty fries made from boiled boxty dough, soft and moist inside with a perfectly crunchy exterior. Serve with garlic mayonnaise!
Preparation Time: 1 hour (plus overnight in the fridge)
Serving Size: 1 serving

Ingredients:

- 1 batch boxty dough
- 0.5 - 1 liter sunflower oil
- A pinch of fine sea salt
- Garlic mayonnaise for dipping

Instructions:

1. Prepare the boxty dough and cook it into pancake-sized cakes. Leave the pancakes in the fridge overnight.
2. Take the pancakes out to room temperature 1-2 hours before frying.
3. Slice the pancakes into French fry-sized pieces.
4. Heat the oil in a pot (use a thermometer) to 180 degrees Celsius (356 degrees Fahrenheit).
5. Deep fry the boxty strips in batches until they are golden brown and crispy.
6. Remove the strips with a slotted spoon and drain on paper towels.
7. Sprinkle fine sea salt on top if desired.
8. Serve with garlic mayonnaise.
