A traditional Irish potato pancake made with both mashed and grated potatoes. Perfect for breakfast or as a side dish.
Preparation Time: 1 hour
Serving Size: 4 servings
Ingredients:
- 300 g cooked and mashed potatoes
- 300 g grated raw potatoes
- 300 g all-purpose flour
- 2 tsp salt
- 400-850 ml milk
- Oil for frying
Instructions:
1. Peel the potatoes and boil them in salted water until tender. Drain and let them dry.
2. Pass the cooked potatoes through a potato ricer and grate the raw potatoes coarsely.
3. Squeeze the excess moisture from the grated raw potatoes using a clean kitchen towel. Let the starch settle for 15-20 minutes, then pour off the excess liquid, keeping the starch at the bottom.
4. Combine the mashed potatoes with the flour. Add the grated potatoes, starch, and salt. Mix well.
5. Gradually add 400 ml of milk and stir; add more milk as needed for a thinner batter. Let the batter rest for 30 minutes.
6. Heat a pan over medium heat. Use a little oil or fry without oil if preferred.
7. Spoon the batter onto the pan in desired sizes for the boxty. Cook for about 2-3 minutes on each side until golden brown.
8. Serve warm with bacon, poached eggs, or crème fraîche.
