A delicious and colorful twist on classic fries made with a mix of root vegetables and topped with creamy cheese. Preparation Time: 10 minutes

Ingredients:
- 500 g potatoes - 300 g sweet potatoes
- 200 g carrots
- 200 g beets
- 200 g Apetina cheese
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika powder
- 1 tsp garlic powder
- Fresh herbs (such as parsley or thyme) for garnish
Instructions:
1. Peel and cut the potatoes, sweet potatoes, carrots, and beets into strips about 1 cm thick. 2. In a bowl, mix the vegetable strips with olive oil, salt, black pepper, paprika powder, and garlic powder until well coated.
3. Spread the seasoned vegetable strips on a baking sheet and roast in a preheated oven at 200°C (392°F) for about 25-30 minutes or until they are golden brown and crispy.
4. Remove the vegetables from the oven and crumble the Apetina cheese on top.
5. Return the root vegetable fries to the oven for a few more minutes until the cheese has melted.
6. Take out of the oven and garnish with fresh herbs before serving.
7. Serve warm as a snack or a side dish.
