Ingredients:

- 1.5 kg beef roast (such as chuck or shoulder)
- Salt to taste
- Black pepper to taste
- 4-6 garlic cloves
- 2-3 onions
- 4-5 potatoes
- 2-3 carrots
- Fresh herbs (such as rosemary, thyme)
- Bricks or stones for lining the fire pit
- Aluminum foil (to cover the meat)

Instructions:

1. Dig a pit for the fire and line it with bricks or stones.
2. Season the roast with salt, black pepper, and crushed garlic. Let it marinate for a while.
3. Cut the onions, potatoes, and carrots into large pieces.
4. Place the roast in the center of the pit and surround it with the vegetables and herbs.
5. Cover the meat with aluminum foil and line it with bricks or stones.
6. Light the fire and let the flames cook the meat for about 4-6 hours, until it is tender and juicy.
7. Serve the rosvopaisti warm with simple sides like fresh bread or salad.
